Day 28 of Ramadan

Saffon Rice 

This slightly sweet and nutty rice has the golden flavor of saffron that spreads throughout the dish as the rice cooks. It also has tender little peas and cashews that have been softened in cooking. This mix of colors and flavors is warming and refreshing. We serve it with good lamb curry or eat it on its own with a little yogurt for a light vegetarian dinner.

Saffron Rice with Peas and Cashews
serves 4-6
1 tablespoon oil
2 cups Basmati rice, well-rinsed and washed
1/2 teaspoon (2 pinches) saffron threads
1 cup unroasted, lightly salted cashew halves
1 cup frozen organic peas
3 1/2 cups water
1 teaspoon salt, or to taste

Wash and drain rice. Heat the oil over medium-high heat in a 4-quart pot. Add the rice and fry a couple minutes. Add the saffron threads and cashew halves and fry for another minute. Add the peas, fry for a few moments, then add the water, stir, and bring to a boil. Reduce to a simmer, cover, and cook for 18-20 minutes.

Take off the lid and turn the heat off. Let the rice sit to "dry" for a few minutes. Serve...........site

I seek refuge with You from the evil of what I do. I acknowledge Your blessing and I acknowledge my sin, so forgive me, for there is none who can forgive sin except You).” He said: “Whoever says this during the day, believing in it firmly, and dies on that day before evening comes, he will be one of the people of Paradise, and whoever says it at night, believing firmly in it, and dies before morning comes, he will be one of the people of Paradise.” Narrated by al-Bukhaari (6306)

Hadith

Narrated Talha bin 'Ubaidullah: A man came to Allah's Apostle asking him about Islam, Allah's Apostle said, "You have to offer five compulsory prayers in a day and a night (24 hours)." The man asked, "Is there any more compulsory prayers for me?" Allah's Apostle said, "No, unless you like to offer Nawafil (i.e. optional prayers)." Allah's Apostle then added, "You have to observe fasts during the month of ramadan." The man said, "Am I to fast any other days?' Allah's Apostle said, "No, unless you wish to observe the optional fast voluntarily." Then Allah's Apostle told him about the compulsory Zakat. The man asked, "Do I have to give anything besides?" Allah's Apostle said, "No, unless you wish to give in charity voluntarily." So, the man departed saying, "By Allah I will neither do more nor less than that." Allah's Apostle said, "If he has said the truth he will be successful."  (Book #48, Hadith #843)
